Cheese Bread

Another great flat bread particularly suited for people on Atkins diet

Equipment

  • Oven tray
  • Baking Paper
  • Mixing Bowl

Ingredients
  

  • 250 Grams Mozzarella Cheese Shredded (2 Cups)
  • 30 Grams Cream Cheese (2 Tbsp)
  • 2 Eggs
  • 125 Grams Almond Flour

Instructions
 

  • In one bowl mix together the Mozzarella and the Cream cheese
  • The heat it up just enough to melt together
  • In another bowl mix together the eggs and the almond flour
  • Then add the melted cheese mix to the almond-egg mix by making sure you have an even mix
  • Use the baking paper on to the oven tray and pour the mix in either a single large flat piece or several smaller one as you wish.
  • Bake for 15-20 minutes at 160°

Notes

Because of the very low calories content, this bread is very good for people on the Atkins diet.
You can easily sprinkle salt and oregano to convert this bread to a focaccia

Mini Pizzas

Ingredients
  

  • 1 6 pack English Muffins
  • 1 Bottle or can Tomato Sauce Italian Passata di pomodoro
  • 150 Grams Ham or Prosciutto Crudo or Bacon
  • 200 Grams Mozzarella Cheese or Bocconcini di Mozzarella
  • 100 Grams Black Sliced Olives Optional but recommended
  • 100 Grams Anchovies Optional but recommended

Instructions
 

  • Open the muffins in half and place them on a large oven tray
    1 6 pack English Muffins
  • Add two spoons of tomato paste for each of the half muffins
    1 Bottle or can Tomato Sauce
  • Add ham or what ever you have chosen
    150 Grams Ham or Prosciutto Crudo or Bacon
  • Add the black Olive
    100 Grams Black Sliced Olives
  • Add the anchovies
    100 Grams Anchovies
  • Add the cheese
    200 Grams Mozzarella Cheese or Bocconcini di Mozzarella
  • Put them in the oven

Notes

They taste great and they are very easy to make..
Change cooking time according to taste and oven capacity..

Pasta con tonno fagioli e cipolla

  • 1 Large Bowl
  • 1 colander

Ingredients
  

  • 500 Grams Pasta Any really, spagetti, macheroni, spiral...
  • 1 can Large tuna in spring water The one in oil doesn't taste nice
  • 1 large red onion 2 if you are a onion lover
  • 1 can mixed beans what ever beans you have
  • 2 clove garlic or two spoon of crushed garlic
  • 2 small chilli or again two spoon of crushed Chilli
  • 1 olive oil be generous
  • salt to taste
  • black pepper to taste

Instructions
 

  • While the water is boiling (with salt in it) for the pasta cut the red onion in small pieces and put them in the large bowl
  • Then open the tuna and again into the large bowl followed by the beans
  • Add olive oil, garlic and chilli to the bowl and mixed everything thoroughly
  • Add pasta to the boiling water
  • Once the pasta is cooked drained in the colander and rinse the cooked pasta in cold running water. This is a cold meal after all and you also want to keep the pasta al dente
  • Once the pasta is cold add it to the large bowl and again mix the lot thoroughly
  • sprinkle the lot with salt and pepper to taste

Notes

This has got to be the most popular summer meal in Italy. It is simple cheap quick and above all refreshing. As an added bonus it taste the same even the day after because it is a cold meal...
The tuna will tend to dry the meal, so it pays to be generous with the olive oil once it is all together...

Penne con Scamorza

A simple variation to the usual plate of penne

Ingredients
  

  • 4 Spoons Olive Oil Extra Virgin
  • 500 Grams Cherry Tomato
  • 2 Clove Garlic
  • 130 Grams Ham Thick sliced if possible
  • 200 ml White wine any white will do
  • 400 Grams Penne Rigate Normal penne are fine too
  • 300 Grams Scamorza Woolworth sell it as Mozzarella (Pear Shape)
  • 1 Bunch Parsley A Handfull
  • 1/2 Spoon Chilly pepper Fresh or dry and Optional

Instructions
 

  • Start by cooking the Penne as usual in 4 litres of salty water and at the same time in a decent size Pan, heat up the oil with the Cherry tomato cut in half and the Garlic clove in half as well. Keep cooking for around 6 minutes on medium heat..
    500 Grams Cherry Tomato, 2 Clove Garlic
  • Now add the ham cut in small dices and keep mixing the lot for another 5 minutes..
    130 Grams Ham
  • Now it is time to add the white wine at full heat until at least half of the wine has evaporated. At the same time drain the pasta but keep it warm..
    200 ml White wine
  • Time to add the scamorza cut in small dices to the pasta with the four spoons of olive oil and the tomato sauce. Finally add the 1/2 spoon of chilly and the parsley finely cut...
    4 Spoons Olive Oil, 400 Grams Penne Rigate, 300 Grams Scamorza, 1/2 Spoon Chilly pepper, 1 Bunch Parsley

Notes

Once the pasta has cooked (al dente) drained and keep it in a warm dish to retain the heat. This will help the scamorza melting nicely...
Scamorza is just a dried Mozzarella sold normally in a pear shape in the deli or cheese section of the supermarket

Peperonata

  • Large Saucepan
  • Cutting board
  • Nice sharp Knife

Ingredients
  

  • 2 Large Red Capsicum
  • 2 Large Green Capsicum
  • 8 Meedium size white Onions
  • 3 Tea spoons Garlic
  • 50 ml Olive Oil
  • 1 bottle Passata di Pomodoro
  • 1.5 Cup Rice (optional)
  • 1 Salt and Pepper to please

Instructions
 

  • Cut the Onions and the capsicums in 1cm slice
  • Add the 50ml of olive oil into the pan on a low flame
  • Add the garlic
  • Add the sliced Onion and Capsicums
  • Read the Note Below

Notes

Ok. The great thing about this recipe is that based on which last step you take, it can be used either as a Main Course, a Side dish or even as a Chunky Soup..
  1. For a Main Course cook the onions and the capsicum with the Passata di Pomodoro while cooking separately the Rice. You can then add them together (as per picture) or serve them separately..
  2. For a Side dish, omit the rice and serve it with your prefer piece of meat..
  3. For a Soup omit the rice, but add instead a cup of water to the oil at the beginning and cook the Peperonata with the lid on, all the way. It will produce a large quantity of soup that can be then served with either fresh bread or croutons..
I have seen several Peperonata recipes online where they also have added carrots or eggplant. My family never used either in this dish, but that's not to say that in another region of Italy they may do.. Perhaps served as a salad, but that's not a Peperonata..
In winter, the soup version served very hot is a very popular choice as it really does clear your nose and gives you plenty of heat and energy..
If making the soup version, you can also keep it refrigerated for a few days..

Yoghurt Bread

Ingredients
  

  • 1 cup Greek Yoghurt 285g
  • 1 cup Self Raising Flour
  • 1/4 cup finely chopped flat leaf parsley

Instructions
 

  • In a large bowl, mix together yoghurt, flour and parsley until it forms a smooth dough
  • Transfer the dough to a floured surface. Divide into 4 equal parts
  • Roll out each piece of dough to about 8 inches (20 cm) in diameter, using plenty of flour to prevent sticking or tearing
  • Cook the bread in a dry pan over medium-high heat for 2-4 minutes per side, until golden brown and cooked through

Notes

A very quick & easy recipe.
